ทุกวันนี้ข้าวถุงที่เรากินกันทุกๆ มื้อนั้น คุณค่าทางอาหารน้อยลงไปเรื่อยๆ แถมอาจจะทำให้เราเป็นโรคเพิ่มขึ้นได้ด้วยนะ เคยได้ยินนักวิชาการทางด้านสุขภาพตั้งข้อสังเกตว่า “คนไทยเราป่วยเป็นโรคเบาหวาน และโรคความดันโลหิตมากขึ้น” ซึ่งก็จริง แต่หลายท่านยังตั้งข้อสังเกตเพิ่มเติมอีกว่า “ทั้ง 2 โรคนี้ มาพร้อมกับการกำเนิดของโรงสีข้าว”
ลองคิดดูสิ เรากินข้าวกันทุกวัน วันละ 3 มื้อ กินติดต่อกันมาตั้งแต่เกิด ข้าวที่เรากินกันเป็นข้าวขาว ซึ่งเป็นข้าวที่ผ่านกระบวนการสีข้าวจนขาว ไม่ว่าจะเป็นข้าวพันธุ์อะไรก็เป็นสีขาวเหมือนกันหมด ข้าวหอมมะลิสีขาว ข้าวเส้าไห้สีขาวฯ จริงอยู่…ข้าวขาวดูดีสะอาดตา หรืออย่างน้อยก็ทำให้เรารู้สึกว่าสะอาดดี แต่จริงๆ แล้วข้าวขาวที่เรากินกันนั้นมีแต่แป้งทั้งนั้น จะมีกากใยบ้างก็เล็กน้อยเต็มที ตามความรู้เดิมๆ ที่เราเรียนตั้งแต่สมัยมัธยมก็คือ แป้ง เมื่อถูกย่อยจะกลายเป็นน้ำตาล ในกระเพาะอาหารเราก็ย่อยข้าวขาวที่มีแต่แป้งให้กลายเป็นน้ำตาล ดังนั้นร่างกายเราก็ดูดซึมน้ำตาลเข้าสู่กระแสเลือด เป็นอย่างนี้ทุกวันๆ ละ 3 เวลาหลังอาหาร เมื่อมีน้ำตาลในเลือดเยอะคุณคงเดาออกว่าจะเป็นโรคอะไร ใช่แล้วครับ “เบาหวาน” และมันมักจะมาพร้อมกับความดันโลหิตสูงซะด้วย
อีกเรื่องหนึ่งดูเหมือนเราจะเลี่ยงไม่ได้คือข้าวในเมืองไทยส่วนใหญ่จะถูกปลูกในเชิงอุตสาหกรรม ดังนั้นกระบวนการปลูกก็จะใช้สารเคมีเป็นจำนวนมากเพื่อให้ได้ผลผลิตสูง ใช้ปุ๋ยเคมีเพื่อเพิ่มสารอาหารในดินก่อนปลูก และใส่ปุ๋ยเคมีระหว่างที่ข้าวเจริญเติบโต พ่นสารเคมีป้องกันแมลงบางอย่าง แต่ถ้ามีแมลงอีกอย่างเข้ามา ก็ต้องพ่นสารเคมีกำจัดแมลงตัวนั้นอีก หลังจากเก็บเกี่ยวข้าวมาแล้วเมื่อขายเข้าโรงสีข้าว โรงสีก็ไม่ได้สีข้าวซะทีเดียว ข้าวเปลือกก็จะถูกเก็บเอาไว้ในโกดังก่อน การเก็บข้าวเปลือกในโกดังนั้นก็ต้องรมสารเคมีกันมอดกันแมลงอีก ในขั้นตอนการสีข้าวให้ขาวคุณประโยชน์ของข้าวถูกขัดออกไปหมด ทั้งวิตามิน B1 B2 Bรวม โปรตีน(ข้าวก็มีโปรตีนนะจ๊ะ) และเกลือแร่อีกหลายชนิด เหลือแต่แป้งไว้ให้เรากิน…น่าเศร้าจัง แต่ยังเศร้ากว่านั้นอีก คือหลังสีข้าวให้ขาวแล้วโรงสีก็ต้องส่งไปเก็บรอการบรรจุถุงขาย ตอนเก็บข้าวขาวนี้ก็ต้องรมสารเคมีป้องกันมอดและแมลงอีกที ลองกลับไปนับในย่อหน้านี้ดูสิครับว่ามีสารเคมีเข้ามาในกระบวนการทำข้าวมากแค่ไหน ข้าวขาวที่เรากินกันทุกวันนี้คือข้าวที่ตายแล้ว ตายแล้วตายอีกหลายรอบกว่าจะมาถึงเรา อิจฉาคนสมัยก่อนที่ได้กินข้าวกล้อง ข้าวซ้อมมือที่ตำกินเอง ปลูกด้วยปุ๋ยอินทรีย์ ไม่มีสารเคมีอย่างสิ้นเชิง เรียกว่า “ข้าวกล้องอินทรีย์ฆ ข้าวกล้องหรือข้าวซ้อมมือ คือข้าวที่ยังมีชีวิต ถ้าโปรยลงบนดินก็สามารถงอกขึ้นมาเป็นต้นข้าวได้ สังเกตดูสิครับคนรุ่นทวดเราจะเป็นคนที่อายุยืนมากๆ แต่รุ่นปู่ย่าตายายเรานี่ไม่ค่อยยืนเท่า
